In a large skillet, heat 1 tablespoon of olive oil or butter over medium-high heat. Add the sliced sausage and cook until browned and crispy, about 5-7 minutes. Remove the sausage from the skillet and set aside.
Cook the Potatoes and Onions:

Return the browned sausage to the skillet with the potatoes and onions. Stir to combine and cook for an additional 5 minutes, allowing the flavors to meld together and the sausage to heat through.
