1. Marinate the Chicken:
To ensure your chicken gyros are tender and flavorful, start by marinating the chicken. In a bowl, combine the olive oil, minced garlic, lemon juice, red wine vinegar, oregano, paprika, cumin, salt, and pepper. Stir well to create a marinade. Add the chicken thighs, ensuring each piece is coated with the marinade. Cover and refrigerate for at least 30 minutes, but for best results, marinate for 2-4 hours (or overnight).
2. Prepare the Tzatziki Sauce:
While the chicken is marinating, prepare the tzatziki sauce. In a mixing bowl, combine the Greek yogurt, grated cucumber, dill, garlic, and lemon juice. Stir well and season with salt and pepper to taste. Cover and refrigerate until ready to use. The tzatziki will thicken slightly as it sits, allowing the flavors to meld together.
3. Cook the Chicken:
Once the chicken has marinated, it’s time to cook! You can either grill, pan-sear, or bake the chicken depending on your preference.
Grill: Preheat the grill to medium-high heat. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Pan-sear: Heat a large skillet over medium-high heat. Add a little olive oil and cook the chicken for 6-8 minutes per side, until golden brown and cooked through.
Bake: Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet and bake for about 20-25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
Once cooked, remove the chicken from the heat and let it rest for a few minutes. Slice it thinly against the grain to achieve tender, bite-sized pieces.
4. Assemble the Gyros:
Warm the pita or flatbread in a dry skillet or microwave for a few seconds until soft and pliable. Lay the pita on a flat surface and spoon a generous amount of tzatziki sauce in the center. Add a few slices of grilled chicken on top. Then, layer in your fresh toppings: sliced tomatoes, onions, and cucumbers. If you like, sprinkle some crumbled feta cheese and fresh parsley for added flavor and color.
5. Serve and Enjoy:
Wrap up your gyros like a burrito, folding in the sides of the pita to hold everything together. Serve immediately with a side of extra tzatziki sauce for dipping or enjoy with some Greek salad and crispy fries.
