4 medium-sized potatoes, peeled and diced
1 tablespoon olive oil
2 cups beef broth
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons ketchup
1 tablespoon soy sauce
1 tablespoon Dijon mustard
Salt and pepper, to taste

How to Make Salisbury Steak and Potato Skillet
Step 1: Prepare the Salisbury Steaks
In a large mixing bowl, combine ground beef, bread crumbs, chopped onion, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix until just combined; be careful not to overmix. Form the mixture into four oval patties.
Step 2: Brown the Steaks
In a large skillet over medium heat, add olive oil. Once hot, add the patties to the skillet. Cook for about 3-4 minutes on each side until browned. Remove the patties from the skillet and set them aside on a plate.
