Rougail Sausage with Red Beans and Creole Spices
Preparation:
Cooking starter: Blanch sausages in boiling water for 10 minutes, then chop.
Rye base: Return onion, garlic and grated ginger to a pan with oil.
Add tomatoes: Add chopped tomatoes, chilli and thyme, boil to make a sauce.
Stir in sausage and beans: Add pod and beans. Salt, pepper, and boil for 15 minutes.
Serving: Serve with rice or grains
