Preparation
In a large bowl, mix 120 g of flour, 200 ml of warm water, the dry yeast and the sugar. Let this mixture sit for 20 minutes to activate the yeast.
Add an additional 200 ml of warm water, 10 g of salt and 360 g of flour to the mixture. Knead well until you obtain a soft and homogeneous dough.
Cover the bowl with a cloth and let the dough rest in a warm place for 1 hour to rise.
Sprinkle 100g of flour on a work surface and place the dough on it. Knead lightly and then roll out the dough with a rolling pin until it is about 1cm thick. 

Place the stretched dough on a previously greased 24 x 36 cm baking tray.
Using an oven rack, make marks on the dough vertically and horizontally to create a grid pattern. This is the trick that will make your bread unique.
Let the dough rest in the pan for an additional 20 minutes to let it rise a little more.
Mix 30 ml of water with 1 egg yolk and brush this mixture over the dough. Sprinkle 10 g white sesame seeds on top.
Preheat the oven to 180°C and bake the bread for 30 minutes or until golden and crispy.
Remove the bread from the oven and let cool before cutting and serving.
Tips:
Make sure you don’t skip the resting time, as it is crucial for the bread to rise properly.
You can add your favorite seeds in addition to sesame, such as poppy or sunflower seeds, to vary the flavor and texture.
If you want a softer bread, cover the dough with a damp cloth during the rising time.
