3 1/3 cups all-purpose flour
2 cups mashed bananas
2/3 cup water
1 1/2 teaspoons salt
2/3 cup shortening
2 teaspoons baking soda
1/2 teaspoon baking powder
2 2/3 cups white sugar
4 eggs
1 teaspoon ground cinnamon
1 teaspoon ground cloves
2/3 cup chopped pecans
Instructions:
1. Preheat the oven to 325°F (165°C) and grease 8 pint canning jars.
2. In a large bowl, cream 2/3 cup shortening with 2 2/3 cups sugar. Add 4 eggs, mashed bananas, and 2/3 cup water. Sift together 3 1/3 cups flour, 1/2 tsp baking powder, 2 tsp baking soda, 1 1/2 tsp salt, 1 tsp ground cinnamon, and 1 tsp ground cloves. Mix this with the banana mixture and add 2/3 cup chopped pecans.
3. Fill the greased jars halfway with the batter, without putting on the lids. Clean any batter from the jar rims.
5. Bake in preheated oven for 45 minutes. Sterilize the lids and rings in boiling water while baking.
6. Once done, remove each jar, clean the rims, and immediately seal with a lid and ring.
7. Listen for the “ping” sound as they seal or check for a sealed lid when they’re completely cool.

8. Eat promptly or refrigerate sealed jars for up to a week.
