Ingredients You’ll Need

1 pound ground beef (80/20 blend recommended)
1 cup breadcrumbs (plain or seasoned)
1/2 cup milk
1/4 cup ketchup
1/4 cup cooked bacon, chopped (about 4-6 slices)

1 large egg
1 teaspoon garlic powder

How to Make Bacon Mushroom Swiss Cheese Meatloaf
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.

Step 2: Sauté the Mushrooms
In a skillet over medium heat, add a small amount of oil and sauté the finely chopped mushrooms until they are tender and the moisture has evaporated (about 5-7 minutes). Allow them to cool slightly before adding to the meat mixture.

Step 3: Mix the Meatloaf Ingredients
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, ketchup, chopped bacon, sautéed mushrooms, shredded Swiss cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined, being careful not to overmix, which can result in a dense loaf.

Step 4: Shape the Meatloaf
Transfer the mixture to the prepared loaf pan, shaping it into a loaf. You can also shape it freehand on a baking sheet if you prefer a crustier exterior.

Step 5: Prepare the Topping
In a small bowl, mix together the ketchup, brown sugar, and mustard. Spread this mixture evenly over the top of the meatloaf.

Step 6: Bake
Place the meatloaf in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (70°C). For added flavor, you can baste the meatloaf with the drippings halfway through cooking.
