Recipe Directions
For the Mince:
Heat the vegetable oil in a large skillet or frying pan over medium heat.
Add the chopped onion and garlic to the skillet and cook until softened, about 5 minutes.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, and dried rosemary.
Season with salt and pepper to taste.
Reduce the heat to low and simmer the mince for 15-20 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
For the Tatties:
While the mince is simmering, place the potatoes in a large pot of salted water and bring to a boil.
Cook the potatoes for 15-20 minutes, or until tender.
Drain the potatoes and return them to the pot.
Add the butter and milk to the pot with the potatoes and mash until smooth and creamy.
Season with salt and pepper to taste.
How to Serve
To serve, spoon the mince onto plates or shallow bowls.
Top with a generous portion of mashed potatoes.
Garnish with chopped fresh parsley, if desired.
