1 pound ground beef (or substitute with cooked black beans for a vegetarian option)
1 small onion, finely chopped
1 packet (1 ounce) taco seasoning mix
1 cup salsa (your favorite variety)
1 can (15 ounces) black beans, drained and rinsed (if using)
6 medium flour tortillas (8-inch size)
2 cups shredded Mexican blend cheese

Directions:
Preheat Oven and Prepare Casserole Dish:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or a light coating of oil.
Cook Ground Beef (or Beans):
In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, breaking it apart with a spoon as it cooks. Drain any excess grease. If using beans, simply heat them through in a separate pan with a bit of olive oil and taco seasoning until well combined.
Add Onion and Seasoning:
Add the chopped onion to the skillet with the cooked ground beef (or beans). Cook for 3-4 minutes until the onion is softened. Stir in the taco seasoning mix and cook for another minute, stirring frequently.
Layer Casserole:
Spread half of the salsa evenly over the bottom of the prepared baking dish. Arrange 2 tortillas on top, overlapping if necessary to cover the bottom of the dish.
Add Meat or Bean Mixture:
Spread half of the cooked ground beef (or bean mixture) evenly over the tortillas. Top with 1/2 cup of shredded cheese.
Repeat Layers:
Place 2 more tortillas on top of the cheese layer. Spread the remaining salsa over the tortillas, followed by the remaining meat or bean mixture. Sprinkle with another 1/2 cup of shredded cheese.
Final Layer and Bake:
Top with the last 2 tortillas and sprinkle evenly with the remaining shredded cheese.
Bake and Serve:
Cover the casserole dish with foil and bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is melted and bubbly. Remove from the oven and let it rest for a few minutes before serving. Garnish with optional toppings such as chopped cilantro, diced tomatoes, jalapeños, and sour cream.
