Bake in preheated oven for 55 to 60 minutes, or until center is set. Turn oven off and let cheesecake cool in oven with door slightly ajar for about 1 hour.
Remove from oven and refrigerate for at least 4 hours or overnight.
Before serving, cover cheesecake with chocolate ganache and garnish with maraschino cherries.
